Maison Bordier Courtoisville
Maison Bordier is the last company to craft its churned butter by hand in a mixer and to salt it the old-fashioned way—on the fly!
Maison Bordier is the last company to craft its churned butter by hand in a mixer and to salt it the old-fashioned way—on the fly!
During the mixing and salting process, the butter loses water—it’s said to “cry”—which gives it distinctive flavor qualities and a rich complexity of aromas, as well as a silky texture. The butter is then shaped by hand and patted with spatulas to form lumps, slabs, or even “custom-made” mini-butter portions for top chefs, who choose the salt content, recipe, shape, and weight.
Maison Bordier also offers a selection of French and European cheeses, aged in our seven cellars. The cheeses are turned, rubbed, washed, and tapped so that you can enjoy them at the peak of their flavor. You can also find Bordier butter at the finest cheese shops throughout France.
In our La Maison du Beurre shop, you’ll find a discovery area exploring the history of butter throughout human history, as well as an exhibition of the tools and objects used in the 19th century.
When Jean-Yves Bordier became an artisan butter maker in Saint-Malo in 1985 by taking over the dairy shop La Maison du Beurre, founded in 1927, he rediscovered the art of churning and beating butter, carrying on the traditional methods and essential techniques of the old butter makers—which are what give his butter its quality today.
What’s more, in each of our shops, you can watch as we churn semi-salted butter into blocks, starting from a lump!
